I don't think a topic has been created yet, so I'll start one. Basically, just post any unique recipes that you know of and give information about the ingredients.

Here's one I know. There's really no name for it...I suppose people call it "Melon Juice" or "Cantaloupe Juice".

Ingredients:
1 Cantaloupe
Sugar
Water
Ice

Cut cantaloupe in quarters and remove seeds. Scrape out the inside flesh with this tool: (You can mainly find it in Asian stores) =/ http://photos1.blogger.com/blogger/3455/399/200/grater.png

Fork works as well too, I guess. Do this all in a bowl to catch the juices.

Put the the scrapings and the juice in a pitcher and add sugar; stir to dissolve and add more sugar depending on how sweet you want the juice to be. I usually end up adding A LOT. Top off with ice and water and stir. Refrigerate and serve cold. ^_^

Ultimate Hot Chocolate
- Taken from the Great American Recipes Easy Everyday Cooking cookbook -

Ingredients (serves four)
1 cup heavy cream
8 oz. semisweet chocolate, finely chopped
3 cups whole milk
4 cinnamon sticks
sweetened cocoa powder, to garnish

Step 1)
Whip the cream in a medium bowl until stiff peaks form. Chill.
Meanwhile, place the chocolate in a heatproof bowl set on top of a saucepan of simmering water. Stir in 3 tbsp. water and heat, stirring, until the chocolate is melted.

Step 2)
Place the milk in a medium saucepan and heat until nearly boiling. Remove the milk from heat and gradually whisk into the melted chocolate, a little at a time. Continue whisking until frothy and combined.

Step 3)
Divide the hot chocolate evenly among 4 mugs or heatproof glasses. Stir well.
Divide the whipped cream evenly among each drink and add a cinnamon stick. Sprinkle with the cocoa and serve hot.


Great Ideas:
Make your hot chocolate extra special by piping on the whipped cream in a decorative pattern.
Garnish with a mint leaf, if desired.

Serving Suggestion:
Create a chocolate-lovers' dream dessert by serving the hot chocolate with fudge brownies.

COMPOSTER HOBO DUMP DISASTER SANDWICH!

how to make something fergalicous, delicous, nutritous, and maybe even malicous.

You need:
A can of Sardines,
A piece of bread,
Milk,
The grease out of the sardine can.

(DO THIS ON A PLATE WITH HIGH EDGES!)
1. Get the bread.
2. Pour about 50ml of milk on the bread.
3. Dump the whole can of Sardines on the 1 peice of bread. (or less but at least put on 2.)
4. Put some more milk on the sardines.
5. Dump the oil out of the can into the milk glazed sardines,
6. Put the 2nd peice of bread on top.
7. Put in the microwave for 6 minutes on ULTRA-HI (or HI if you don't have it)
8. Take it out and enjoy eating your Composter Hobo Dump Disaster Sandwich!

P.S. do not attempt without ADULT SUPERVISION, or retard brother supervision! (ages 8-15)

Banana Bread

Before I go listing the ingredients, I want to make sure that you've done a few things. If you can't answer "yes" to all of the following questions, read no further until you can.

1) Do you have a digital scale? Look no further than my previous entry for the reasons why.

2) Do you have an aluminum loaf pan, parchment paper, and some kind of lubricant? I recommend Crisco Baking spray, or any cooking spray that contains flour. I don't recommend ever dusting any sort of pan with flour...as you have flour-y residue on your baked good.

3) Are your bananas ripe? Now, when I say ripe, I mean REALLY ripe. Like this (if not even a little blacker):

Trust me, they are fine to put in the bread...you won't get sick. I've eaten quite a bit of bread from some far-gone bananas and I'm still kicking. =P

You answered yes? Great! Now, on to the recipe!

Recipe

Wet Team One
  • 340g overripe bananas (you better weigh these)
  • 210g sugar
Wet Team Two
  • 1 stick unsalted butter, melted
  • 2 large eggs
  • 1 tsp almond extract
Dry Team
  • 255g AP (all-purpose) flour
  • 6g baking soda
  • 6g salt
Instructions
  1. Preheat your oven to 350°F and make sure one of the shelves is in the middle.
  2. Prep a loaf pan with parchment paper and/or spray lube.
  3. Mash the Wet Team One together with a potato masher until smooth. This will only be possible if your bananas are really ripe.
  4. Sift together the Dry Team in the food processor for a few seconds
  5. Combine the Wet Team Two together in a separate bowl, then combine both Wet Teams together.
  6. Pour the Wet Team(s) over the Dry Team in a large mixing bowl, and whisk together until a batter just forms (no more than 10-15 seconds).
  7. Pour the batter into the loaf pan and bake for 50-60 minutes, or until the internal temperature reaches 210°F. (The toothpick test works here...but the toothpick shouldn't be completely clean...just mostly clean)
  8. Allow the bread to cool in the pan for 15 minutes before removing to a rack to finish cooling.
  9. Slice and enjoy!
And that's it. I'll be posting sometime soon in the next few days with a "method" post. What do I mean by that? Well, you'll have to tune in next time to see. ;D
 
Ok, I've mentioned this one before on the SB so I'll pop it here ^^

Grilled Chicken and Bacon Parcel.

1x Chicken Breast (butterflied is the best)
3x Strips of Bacon
1x light BBQ marinading sauce
15-20g of Grated Cheese (more or less can be added according to taste)
1g Rosemary Garnish (optional)

Cooking Instruction:

Use a Griddle pan or a George foreman for this (George foreman is quicker, but its going to get quite messy so if you dont want to spend ages scraping cheese off the bugger, stick to the pan)

1. Take the Chicken breast and put it on the griddle surface/pan and using a knife, gouge two slits into the breast (this will assist with cooking the breast thorougly through)

2. Lightly marinade one side with BBQ sauce, flip over and marinade the other side, cook until all areas of pinkness are gone.

3. put your 3 pieces of bacon on the griddle surface, cook until it begins to brown.

4. Wrap the bacon around the Chicken breast, (use a prong fork to help you with this, and a paper towel so you dont scald yourself)

5. smother the combination in cheese, Grated cheddar or emmental work best, but any cheese of your choosing, as soon as one side has melted, flip over and cover the other, marinade lightly in BBQ sauce to enhance the flavor.

6. Take and place on a plate, garnish with rosemary....for the best results serve it with a pot of Texan BBQ sauce and Enjoy!
 



Vegetarian "beef" & cheese burrito.
[Could also use ½ lbs of beef to make it for meat eaters, like me.
but I wouldn't be able to tell you the health facts on that.]


Morningstar Farms Meal Starters [ or ½ lbs of beef.]
1 diced tomato
1 stalk celery
1/2 large onion
1/2 c spinach
Salt
1 tbsp I Can't Believe It's Not Butter Light Spread (Or Fat Free for 20 calories less and 2 less grams of fat)
3 8" Tortilla Wraps (I used Tumaros Gormet- yum).
1/2 c Kraft Mozzarella Part Skim Shredded Cheese
Honey Mustard


* Servings Per Recipe: 3
* Amount Per Serving
* Calories: 294

* Total Fat: 10 g
* Cholesterol: 10 mg
* Sodium: 524 mg
* Total Carbs: 34 g
* Dietary Fiber: 5 g
* Protein: 19 g
* [For the vegetarian version]


PREPARE: Have one large and one small skillet ready to go.
Chop all your veggies.

-First, toss your diced tomato into a large skillet with 1 stalk of diced celery and chopped spinach until tomato juice is all soaked up (The beauty in this is that you don't need any oil or butter). Add 2 cups of Morningstar Griller Crumbles (They don't need to be cooked- just heated)
[ or ½ lbs of beef, YOU WILL NEED TO COOK]. Turn off when mixed.
-In the smaller skillet, add your diced onion and butter. Stir frequently on medium-low heat until onion is golden and translucent.
-Add the onion to your meat and veggie combo and add salt to taste. I'd suggest you don't use too much, as the meal already contains a good amount of sodium.
-Heat the wraps to your liking.
-Spread some honey mustard on the wrap for some zest.
-Measure out 2/3 cup for each wrap and place in center. Top each with 1/8 c. mozzarella cheese. Fold/roll wrap.
-Enjoy.

Use left over meat for another meal later on.
Goes great with red sauce pastas.

PASTA CARBONARA

- Spaghetti or some other long pasta (Tagliatelle works quite well)
- Olive oil (vegetable oil works just as well)
- 1 [chopped] oinion
- 1-2 [chopped] peppers
- Bacon (I find smokey bacon works best) - cut into cubes
- 2 [crushed] cloves of garlic
- 3 eggs
- Parmesan cheese
- Chopped parsley
- 3-4 tablespoons of cream


1) Cook the spaghetti according to the packet.

2) Meanwhile, fry the onion in the olive oil and then add the peppers, bacon and garlic. Fry for about 5 minutes then turn down the heat.

3) Beat the eggs in a bowl with the parmesan cheese, cream and parsley. Sprinkle in some salt and pepper too, if you like.

4) Drain the spaghetti off and throw it in the pan with the onions, peppers and bacon. Stir over a low heat until it's well mixed and then pour the egg mixture in. Take the pan off the heat and mix well for another couple of minutes.


Obviously, you can try adding other kinds of vegetables and meat to suit your own tastes. I've been told that ham instead of bacon is quite nice. I've also found that it tastes best when there's a lot of the egg mixture thrown over it, so you might want to add a little more cream to that.

Pumpkin Soup

Pumpkin
Medium Onion
Vegetable stock

Slice dice and peel your pumpkin (it took me AGES to do this part)

Slice and dice the onion and cob it in a pan with a knob of butter (I used about a table spoons worth) let that cook on a low heat stirring regular making sure the onion doesnt brown. Once it's nice and soft throw in the pumpkin and stir constantly till its softened and darkened a tad, about 10 minutes or so should do the trick.

450 mls of boiling water with about 1 and a half tea spoons of vegetable stock (or cubes, whatever you use)

Add to the pumpkin, stir and bring to the boil adding a pinch of salt and a generous helping of ground pepper. Cover and simmer for about 10-15 minutes

Once the pumpkin is nice and soft, add it to a food processor and whir until smooth

Then serve and enjoy

Oh, while the pumpkinwas cooking, I got all the seeds, dried them off and whapped them in the oven for 15 minutes on gas mark 4 (complete guess, but it worked)

Summat good and healthy to snack on, you can also add afew to your soup, though they went soft in the soup and I didnt like them as much, I preferred them crunchy from the oven

I got 2 servings of soup, and a healthy pumpkin seed snack for 75p :monster:

I learned this from a demonstration in class; a 5-minute teaching lesson.

PB&J Sushi Roll

(except it's not really sushi)

What you'll need:

2 slices of bread (whichever you prefer)
Peanut butter
Jelly
1 whole banana


First, you want to take the 2 slices of bread and put them side-by-side. You'll probably want to remove the crust as well, because you'll need to smush the two sides together so that it makes one long piece of bread.

Once you're done with that, spread the peanut butter all over the bread and the jelly like you would with a regular PB&J sandwich.

After the bread is covered, peel the banana completely and lie it in the center of the bread length wise. Then, take the bottom (or top) of the bread and roll it like you're making a sushi roll. It should be wrapped around the length of the banana (man, this is getting pretty dirty, isn't it?) :ryan:

Okay, so now you've got your roll, but what do you do next?! Cut it into little sushi roll pieces! I'd say about a half inch to an inch thick each. Just go down the length of the banana cutting little pieces and, voila! You have your PB&J sushi rolls.
 
Braised Short Ribs and Tortellini

Ingredients:
1-2 lbs of boneless beef short ribs
1 medium yellow onion sliced thin
8 oz of red wine (preferably Cabernet)
1 14.5 oz. can of diced tomatoes
additional beef broth or water as needed for braising
1 bay leaf
fresh ground black pepper and sea salt to taste
1 tablespoon of olive oil

Prep:
Heat olive oil in a dutch oven. Add sliced onions and saute until translucent and soft. Add liquids (wine and broth) and tomatoes. Season with salt and pepper. Add bay leaf. Check and stir every 30 minutes to make sure braising liquid does not evaporate lest the meat stick. Braise ribs for 3 hours or until very tender. Remove bay leaf. Serve ribs and liquid over your Cheese Tortellini, garnish with Parmesan, diced tomato's and Italian parsley leaves.
 
Foods you must try!

I thought I'd make a thread to post recipes of foods that, while some have had and love, others may not have even heard of it. This way, we could all share in our favorite foods and even try some of others. Mods, if this needs to be moved to a more appropriate forum, by all means.

Seeing that nearly everyone from the UK that I've talked to hasn't had mozzarella sticks. may i ask: what? Mozzarella sticks are wonderful. :gasp:

1 lb. Mozzarella
3 eggs
1 c. seasoned bread crumbs
Light vegetable oil
Cut cheese into 2 inch long, 1/2 inch wide sticks. Dip cheese into beaten eggs and then into bread crumbs two times. Freeze for about 10 minutes (can be overnight). Fry until golden brown (about 2 minutes on each side).

And corn dogs. They're awesome, too.

2/3 c. corn meal
1 1/2 tsp. baking powder
2 tbsp. sugar
2 tbsp. oil
1 lb. hot dogs
1 c. flour
1 tsp. salt
3/4 c. milk
1 egg, slightly beaten
8 sticks
Mix corn meal, flour, baking powder, salt and sugar. Add milk and cooking oil, mix well. Add egg. Dry hot dogs; insert sticks and dip in corn dog mixture. Cook in hot oil at 365 degrees until golden brown.
 
:gasp: Everyone has to try mozzarella sticks! :D

I don't have very many recipes as I haven't been cooking for very long, but I will suggest something I always used to love: I know it might sound kind of gross to some people, but melting JIF peanut butter together with cheddar cheese makes an absolutely delicious topping for stuff :awesome: I used to eat it on turkey hot dogs when I used to eat meat--I have yet to try it on veggie dogs or anything else but it's very tasty. It may not be for everyone, but if you're willing to experiment with something new it's definitely worth a try :D

Jello Cake. I simply love this stuff. :grin: Just had some with lunch today, actually.

1 white cake mix
1 (3 oz.) pkg. Jello
1 c. boiling water
1/2 c. cold water
Cool Whip
Prepare cake as directed in an oblong cake pan. Cool pan 15 minutes. Poke cake with fork for small holes, or handle of wooden spoon for larger holes, every 1/2 to 1 inch. Dissolve Jello in boiling water. Add cold water. Spoon over the cake slowly so the Jello mixture soaks into the holes. Chill 3 to 4 hours. Top with Cool Whip.
 
I don't think anybody else ever really does this, but I've fed it to several people and they've all really enjoyed it!

-Slice a green pepper
-Mix equal parts of Olive Oil and Apple Cider Vinegar together in a bowl with a whisk
-Put the green pepper in the bowl, eat with a fork

This is my favourite thing to snack on and it makes me feel refreshed every time I eat it. It also only takes a minute or so to put together.
 
I thought we had a couple of threads on this already. I know I created a thread once that was then merged with a thread already made but I can't find it at the moment. Might be archived...

But I have found another one that is still open in Costa made by Mitsuki. =)

So I'll just merge these two. =)

Cawl (welsh stew)



3 tbsp oil
2 potatoes
1 large Leek
1 large carrot
1 small swede
1 small brocolli
1 small lamb shoulder roll
4 sausages
1 turkey breast
2 litres of vegtable stock

- heat oil in pan Dice vegtables into 2cm bits. Then add them to the pan and brown off the vegtables. Then place in a separate container.

- cut meat into chunks and brown the meat in the pan that cooked the vegtables. Once the meat is browned off add the stock and reduce the stock with the pan covered with the lid for 45 minutes.

- Add the vegatables; make sure theres enough stock in there to cook your vegatbles (add more if needed). Put the lid back on and leave to simmer until the vegtables are cooked through.
