Never. They'll never show it. They never showed it with the Black Mages when their hats were off. I've always asked this myself, but came to the conclusion that we'll never see him without his hat. It'd be ... weird, though.
 
When the Black Mages in the cargo ship were falling off board due to Black Waltz 3, you caught a brief glimpse of one without the hat. It wasn't anything beyond what one would expect...just a human shaped head...but black.

I don't see what's so unfathomable about what the top of Vivi's head looks like.
 
I think it's good that you never see vivi's head. It adds a sense of mystery to his character...
 
Didn't you get to see what one of those black mages looks like...what are they called...the ones that chase you around...I remember you fight one in the snow somewhere....
I thought that in one of the scenes, his hat blows off. o_O
 
I do, in fact, believe that Vivi's head size was defined by his hat.
 
Vivi! I love Vivi! But no, I don't think they showed him without a hat on.

Indeed, but his head does seem to have a shape...a sphere...it reminds me of a bowling ball...i really dont know why :P
