It happens to me, because I stumbled into the fact that Quistis's whip's snap increases the chances of Odin getting summoned. (I pressed R1 everytime there was going to be a weapon hit sound.)
Guides made online will not state whether or not it can be used against bosses because it is trivial information. Brady games messed up with their guide like they always do.

Also if you used Quistis then Odin can't show up, as he only shows up at the beginning of a battle.
