Because making 99999999999999999999+ plot holes keeps making idiots buy their shitty games, which lines their pockets with money. 
If Square want to keep on with FFVII, they should at least turn it into a Novel franchise or some shit, since the story is worth listening to in some games.
As for remakes of FFVIII and FFIX, SE won't do anything like that because they know they'll rake in a small amount of cash from dishing them out.

People keep buying FFVII games, so it only makes sense for SE to make more FFVII games. FFVII is a safe decision due to its popularity, I'm guessing that SE doesn't think FFVIII or FFIX spin-offs will sell as well as FFVII ones.
I'm going to assume that SE remade FFIII and IV because significantly less people have played the originals, (in comparison to the later FF's) so SE probably figured that those two games would sell pretty well.
I'm guessing SE isn't churning out FFVIII and FFIX spin-offs, because they don't think they will sell as well as the FFVII Spin-offs (although, I personally think some people would buy a lump of Nomura's shit if it had 'Final Fantasy' written on it).
Also keep in mind that games are pretty expensive to make. Creating a small FFVII spin-off is probably going to be alot less expensive than a full scale remake of FFVIII or IX. story in ffviii and ix are too thought through and explained, its hard to make a spin-off for those games, and too soon for a remake.
they cashed in with viii pretty much the same as with vii, but vii had too many holes in the plot that they could abuse......and they will abuse it till people stop demanding a remake.....or when they just get tired of drawing the same character over and over again

I like FF7 as well as Square Enix. Every game they've came out with I've tried as hard as ever to play them. It really doesn't matter what it is, a spin off, a new title, or another Final Fantasy. The story in ff7 is has lots of background that's y they have to make a lot.So they can't really not put the prequel games. And some ppl would be wondering "what the hell happened to Zack" and stuff.Its just to put some background into ff7 rily

I dont think it has anything to do with tying up lose ends, we know exactly what happens to Zack from the storyline of VII. It's simply for the money, they KNOW the fanbase is huge and people will buy whatever drap they spit out - I know I did xD

I agree its just for the money. But I did enjoy Crisis Core, Advent Children on the other hand...ok the visuals were amazing...the story was lacking and boring. They shouldnt of put Sephiroth in it IMO although the fight was badass it was just fan service.

Well Crisis Core was a great game, but they'll be really beating a dead horse if they keep going with this. The game was good as it was, it didn't need more to it.
Not to mention they changed certain character's personalities when they added more content.

Meh i agree with you to some degree. I agree that the games have been very average as was the film. The original still stands as a testiment of how a great game should be. I wouldnt mind them making another VII game if it was gonna be a good one, how bout another RPG instead of shooters action etc.
Simply put. Make more if ur gonna put effort into it, if not then i guess il probadly still buy them anyway, il just complain about it on fff.

Yea kind of. I love FFVII, though not the most, but that's my first ever FF which started my love for FF series. I was glad that they had the remake of the FFVII opening sequence in PS3 graphics. That was awesome. I was also very satisfied with Advent Children, showing the endless possibilities of more advanced graphics on the old set. I adore Crisis Core which introduced Zack to us again. But it should be just enough already. It's not that I'm complaining, I'm just doubtful for how long SE can continue to produce quality games and not just hap-hazardly produced titles just to milk the franchise.
