I have the worst trouble facing this guy. He always drains my hp and mp!
Then cuts me up like bread! Any pointers?

Perhaps it would be helpful for those intending to aid you, that you provide your level/stats and general strategy for fighting bosses/monsters.

Also, to which point do you reach in the fight? As I recall he has different stages as the battle progresses - you at least get to the point where he starts running, right?
 
I beat him around 40, so its most likely that your level is not the problem (though it does make it easier). As cid as said it'd be easier to help you if you told us your strategy.
 
Well...I know that "Strike Raid" helped me a lot whenever he was about to use Heartless Angels. Try jumping a lot and take out the Glide ability; replace it with Superglide instead...if you have it.
 
Ars Arcanum helped me out...but I'd only use it as means of escaping several of Sephiroth's more damaging attacks.

Show up prepared. Have all your item slots equipped with elixirs, and make sure you have abilities equipped that'll leave you with some HP after taking critical damage. Casting Aeroga is always a help, too.

Other than that, there's not much else I can suggest. Try to stay close to Sephiroth so you can interrupt some of his attacks. Whenever he disappears suddenly, be prepared to dodge roll or guard immediately. Most of the time, he'll reappear behind you for a quick attack.
 
Kingdom Hearts I.

I found that most of this fight was in the air. Due to the length of his sword, getting anywhere near him on the ground was fatal - he always attacks horizontally, so take to the air and plan your jumps effectively so you land directly next to him. Dodge Roll can work but it's too unreliable.

Ars Arcanum and Ragnarok are good if, and only if, you have as MP Rage and MP Haste equipped together, which basically means an infinite supply of MP (Haste increases MP recovery while Rage replenishes more MP with more damage). Curaga and Aeroga (obtained from speaking to Aerith in the library of Hollow Bastion, and from returning the 99 puppies, respectively) are essential, as is a full inventory of elixers.

When you think Sephiroth is going to summon those fire columns, get out of there as fast as you can - being hit once is fine, but twice or more is deadly.

As for Heartless Angel, I always managed to attack him before it could work but as an experiment I tried to fend for myself after he used it.
If you think you're too far away to get him before he uses it, don't try. Get as far away as possible and get an elixer ready so that all you have to do is click on Sora's name to use it. This fully recovers you before Sephiroth can strike you again (he runs toward you directly).

He'll eventually move on and summon meteors which can easily be dodged by gliding or rolling.

His last tactic is to use his own variation of Omnislash, which is ridiculously easy to protect yourself against. Just attack or guard as he's coming towards you and you should deflect his attack. Once you've deflected one of them, just keep attacking constantly and it works out that every attack times perfectly to deflect all of his swipes.

I personally found it more easy to win by healing and casting aero on myself when in the air. Make sure you have High Jump equipped and, at the peak of your jump, cast your magic so he can't interrupt.
