My favourite is Odin. The summons in XII look cool but I never use them because I find using my three team members is much more effective.
My favourite...Well, I suppose I have a couple. I really liked Valefor in X, but also Shiva. I'd say I like those two equally, but it's hard to say why...And that's not good since I like explaining myself. Haha.
As for the Espers in XII...Ehh, I'd have preferred the old ones. Sure, the new ones weren't bad, but I didn't really care for any of them. None caught my eye, and the first looked like a fat minotaur or something...
Apparently, the first 12 were based off the Zodiac.
