What happens after you beat the game?

Wait, for which game? If you can be more specific, that would help.

Oh. Hmm...well as far as I can tell, that's usually the case...they go home and live a normal life. Take Lulu and Wakka, for instance. They settled back in Besaid...and so did Yuna, up until she discovered that special sphere that eventually started a whole new adventure in her case.
With Cloud and company, we don't really know. Square never really specify on that...but I do think they did live normally until Advent Children. After AC, I'd like to think also that everything was back to normal.
As for VIII, everything was back to normal too. You can see it in the video footage they made as the credits rolled. Squall and Rinoa seemed to have gotten together and lived happily.
EDIT: And erm, I don't think it's weird that they should only go home after saving the world. Heroes deserves a rest too, you know.

ill go from FFVI to FFX - and these are my guesses as to what happens - but based on knowledge 
FFVI
Terra - stayed with the children
Locke and Celes hooked up
Strago relm and shadow probably got together as a happy little family
Edgar and Sabin went back to thier castle
Cyan probably went to that girl in maranda
Gau went back to the Vedlt
Mog and Umaro went back to the mines
Setzer probably became a casino owner
and Gogo....went away XD
These are all guesses
FFVII
Cloud - runs his delivery business, lives with Barret, Tifa, and the kids - or in Aeris church
Tifa - runs her bar, looks after children
Barret - searches for oil
Cait sith - gets shut down by reeve XD
Vincent - havnt played DoC so he does his own thing
Yuffie - as above
Cid - is now married to shera, works on his airship
Red XIII - probably guards cosmo canyon
Aerith - looks over the planet in the lifestream, occaisonaly materialises to talk to Cloud in the flower field - see "calling" at the end of AC

Selphie - hooks up with irvine

Some of these are guesses as they weren't properly clear at the end but there where bits and plus images/Videos of Revenant Wings that would suggest.
Vaan:
Becomes a sky pirate.
Also becomes a sky pirate, Vaan's partner.
Takes over as Gabranth as Judge Magister to protect Lord Larsa at Gabranth's request.
Remains a sky pirate along with Fran. Still helps Vaan.
Remains Balthier's partner.
Becomes queen of Dalmasca.
The ending is 2 years once you beat The Undying so some of the details after the game is a little more explained unlike previous games.

I'd assume that they return to their normal lives. Some may suffer from PTSD. But they pretty much just get on with their lives. Probably rebuild if their town was destroyed.
i can give you my opinion on VII, VIII, IX, X, and XII.
VII-cloud and tifa open a delivery business and keep fighting off people with jenova cells, and fight the geostigma.

X-yuna becomes a spherehunter and tries to find the pieces to the puzzle that will lead her to tidus becuse she doesnt wanna live without him.

To me they just continue on from wherever the story leaves them. For example, Garnet and Zidane get hitched and live together, and Zidane is king of Alexandria with Garnet as his Queen. They don't just suddenly disappear (except Tidus) but they continue on from where they left off.
This is why I like to leave it all up to my imagination instead of seeing sequels and spin-offs. FFVII Compilation and FFX-2 adds more to the story, but there goes all that creativity and imagination we used to picture where Yuna would be 2 eyars after the pilgrimage.
