I only really use Odin in two situations: as a last resort and for enemies which aren't too difficult but take a really long time to beat.
For the first case I will only use Odin if an enemy has a lot of HP left and I am about to die. If the enemy doesn't have much HP left I will opt for a more reliable attack. As Zephiris pointed out; Odin has a high probability of failure and will take a large portion of MP. So I will only gamble with Odin if I know that I will probably die next turn and there is no other way of winning the battle.
The second case applies to those battles which are really easy to win, but take a long time to win. Final Fantasy games are by nature very repetitive especially when levelling. There are some battles which I really can't be bothered fighting, so naturally I want these battles to be finished as soon as possible. So Odin is good for that kind of thing.
