Jumal (found in Luca) is one of the best GK's in the game. You get him and get a couple of abilitys and you wont NEED a defence. He's rarely letted anything in for me, and when im like 7 goals ahead I never complain that he had done. Infact when ever I replay the game this is the only adjustment I make to the team. The original players arn't actually that bad after a few levels up and in most cases can still wipe the floor of any team.
But if you do want a beefer defence, I remember using Ropp (Mi'Hen Highroad Agency) for quite a bit, and Wedge (Luca) can double as a Shooter with Tidus or be an ok defender.
