So if I decide to somehow cryogenically freeze myself for a few centuries (I know it's not the same as being in crystal stasis, but who cares xD) and defrost myself in the year 2500 or something, that would make me wiser than say, a science genius in that period?

And Hope 7 or 14? What? Why would he be either 7 or 14? I would say he's 14, but why can he also be 7 as well? And yes - Fang seems older than Vanille. So according to this idea, she is wiser than everyone.

Wisdom comes through life experiences, age isn't a factor really.

Technically speaking, Fang/Sazh are the wisest. Being in crystal stasis simply means they are frozen in time, they aren't experiencing, they aren't aging. They just have their time stopped.
