Nope, he forgets everything after CoM. And don't remember the ones who had defeated, neither Riku remembers, he also defeated Lexaeus. And, nobody told Sora a thing, but when Naminé put back all the pieces in his memory back to place, he probably remembers it. However there is no proof of that. He never talks about them and they aren't mentioned on KH2.
Because when you can view them in Jimmy's journal it does say they are all dead, so Sora could just say 'Oh five less nobodies to take care of'

You can get it on the PS2 as well; it comes along with the Kingdom Hearts 2 Final Mix + bundle. They're releasing Re:COM in the US soon as well.
As for the other five organization members, they can be viewed in Jiminy's Journal, but I don't think it can be seen as canon evidence; how did he know the names of the other members? I don't quite remember anyone mentioning them in the storyline either. They were probably added in the journal for extra information for you to view.

Yes... Jiminy's Journal seems a bit odd, as I remember a line somewhere in Chain of Memories where they get further into the Castle about his Journal slowly going blank, so if we take this fact as canon, Jiminy would not be able to write about the other organization members without it being lost when they came back, but I don't see any other way he could have it in his journal. Or, as Gabranth said, we could just consider it information for the reader rather than a plothole. Any other theories?

I think this is probably the answer. When he got his memory back, it can generally be assumed that it came back in its entirety.
When Namine pieced together Sora's memories, he forgot everything in Castle Oblivion, and remembered everything else; she says this in COM. At the start of KH2, Jiminy's Journal is empty except 'Thank Namine', and they couldn't remember who or why it says that.
