In the DMC games, how can Dante get shot, stabbed, and bludgeoned but during gameplay you can die? That makes no sense.

I'm not sure if I'm understanding this correctly.

Getting shot, stabbed, and bludgeoned would normally result in death. Of course he can die if that happens to him.

Well, in the cinema, he's been shot in the head, stabbed in the chest, and walked away w/out a scratch. but while playing, you can get killed by a few slashes (could be more,depending on the difficulty)

Maybe because during the game play he needs to sustain enough injuries to die.

Getting shot once in the head is no big deal for him, but get like 12 shots in his pretty head (well, pretty in DMC3), maybe he'll get a little dizzy LOL
