How Do People Record Final Fantasy Games When Running an Emulator?

I've got my Final Fantasy 7 and 8 games sitting in front of me, and I wouldn't mind recording some gameplay , if not just for my favorite scenes.

I'd also like to get into just commentating on a game, not a play by play , but about random things, how would I record my voice?
