IX is the best out of them all. Amazing characters, I love them all besides Amarant. The story is the best. People say it's too lighthearted but i think it's actually quite dark. I love the graphics but a lot of people have an issue with those too, because the characters look a bit 'chibi' but I think it gives it that fantasy charm it's known for. Battle system is a lot of fun, locations have a lot of charm to them, music is the best music in any FF game I think. Only thing I dislike is the trance thing. It's just kinda dumb.
VIII is the worst of the 3. It's such a bore and the junction system is balls.
People just seem to assume that its lighthearted becuase of the graphics, it's all pretty and bright, but I agree with Toni, its really quite dark. Probably darker than most, I feel like anything I say will just be a huge spoiler, but the story is brilliant, one of the best, and the side games will keep you busy for hours.
I don't think Id bother starting with 8, although I do love the game, the drawing and junction system can be really tedius, there are afew wtf moments in the story and not in a good way lol. I dont want to sound like Im slagging the game off, as it is one of my favourites and Ive replayed it loads, I just dont think Id put it top of a which game to play first list.
I'm biased toward 7 as it was my first FF, so I will always think this game is wonderful, I love the story and the materia system.
I'd definately lean more toward 7 and IX, and tbh, Id probably just close my eyes and pick one at random
