Is there anything on disc 1 that can ONLY be done on disc 1? Apart from the regular story obviously.

Getting all of Aerith's limit breaks, including her fourth one. Also, if it counts, the Nail Bat and the Princess Guard in the Temple of Ancients. You won't be able to get either once the temple shrinks and goes byebye.
Then again, the Princess Guard is pretty much only useful in the temple as you can't get back out. And once you end up in Gongaga, Aerith is
already, making it useless.
Unless you can get back out of the temple. I doubt it though.
Also, the sealed door in Cosmo Canyon. Can't go through that anymore after you've gone the first time.
And I'm not sure but I think you can only get Ghost Hands in the Train Graveyard by stealing them from the...well, ghosts. And you obviously can't return once the plate goes down.
Then again, the Princess Guard is pretty much only useful in the temple as you can't get back out. And once you end up in Gongaga, Aerith is
as good as dead

The only thing I know for sure that can only be done on disk 1 is getting all her limits. I didn't know that she, you know, goes away forever, so I didn't do it. If you want to see Great Gospel, you need to get it on disk 1

Oh well too late for me, but I'm assuming the Demon Gate part happens later? Unless it's on disc 1. I am replaying FF7 after so many years and its hard to remember anything except on the first disc.
The Demon's Gate is in the Temple of the Ancients, which is still on the first disc, so you might have already passed that.
And getting Aerith's limit break (which comes as an item) requires a bit of backtracking with your buggy which can be done as soon as you acquire it. So you might want to make sure you pick that up along your way.

One thing that comes to mind on exclusive disk 2, is visiting that cave with Vincent. The one you can only get to by submarine. Anyways you have to visit the cave on disk 2 and 3 to get the ultimate limit breaks and ultimate weapon for Vincent.
