I only have the PS4 edition, so updates (within the package that I have paid for) have been automatic for me.
I'm not sure how it works on PC, but I will ask on your behalf in our Discord and also mark this thread with a 'Help' tag to aid this thread's visibility.
In the meantime, this might give you an idea about the latest updates: https://finalfantasyxv.square-enix-games.com/en/updates
If you click on the 'Windows Edition' button then you will see the most recent updates. That is providing that they have updated that website since 2020.
