There levels are a direct equivalence to what the summoner's stats are. Say Vaan has the summon Ultima (because I can spell Ultima easily 
): When Vaan in at level 56, so is Ultima, and her stats reflect that. In order to see what her stats are at that level range, you will need to look them up online or in the guide. It never lets you know in-game that I'm aware of.

The espers grow stronger as your character that summons the esper levels up. For example: Addramelch's HP is 1100, if the summoner, lets say Vaan, levels up, Addramelch's HP will be 1200 and other stats will grow.
