If you don't have the Chubby Chocobo Card, on disc 4 you can play all the members of the CC club that you've previously played. They usually have cards you didn't get, or cards you've already refined.

I don't really remember which one of them has the Chubby Chocobo card, but I know that one of them has it.

Right. Beating the CC club at the end of the game isn't hard at all. It's your best bet. =]
