I was just wondering what are the best possible stats to have considering you need enough space for 99,999HP?

255 is the most you can have for each stat, it is possible to get all characters stats up that high in all things. However you have to use many clear/friend/strength spheres etc.

I know that but to my understanding, it's impossible to have 255 of every stat if you want 99,999HP....so what would be the best stat setup?
Are you sure about that, as far as I recall you start wiping out thinks like +100 HP and replace them with +200 and such. The same with all other stats, erase the pre-assigned +2s in all attributes and replace them with higher denominations

I've got 255 for all apart from my luck stat which is about 120 ish and about 30,000 to 35,000 HP i beat penance with those stats so that's plenty

It is possible. But it takes an insane amount of time. It took me about 800+ Hours of game time. If you clear the smaller attribute nodes (+1 or +2) and replace them with +4's you'd be suprised just how much space you'll clear up for your +HP nodes.
It's an insane process and I've been there before, all for my wife to erase my save file a few weeks later...
All this talk about it though is making me want to do it all over again
It depends on which Sphere Grid you're using. Google and you will find some useful stat maxing guide, which point out all the how & why.
I'm playing the Expert Sphere Grid and max stats for all characters assuming 99999hp & 999mp are compulsory is: Luck 230, Agility 170, Accuracy 0, Evasion 60, the rest are 255. One node to spare.
It took me about 180hrs to max my frontier (Tidus, Wakka, Rikku), Yuna&Auron are having some decent stats like 70k-ish hp, 130 luck and the rest is maxed as mentioned above. Horribly time consuming for sure.
