7 Days to Die is an open world, voxel based survival shooter. The two games this title is most closely related to are Minecraft and Day Z (The ARMA 2 mod). The world focuses largely on looting, crafting and building during the day; however, at night time, the zombies are buffed and run quickly (similar to Left 4 Dead) to attempt to kill you. As the entire world is destructible, night time is when your structure building and survival skills are actually tested.
There are a number of videos that better explain the game than I do.
The game is currently pre-alpha, but a few copies have slipped out to a handful of Youtubers to spread word of their game in hopes of getting high returns on Kickstarter. FRANKIEonPC, PsiSyndicate, DevilDog and RhinoCrunch are the primary Youtubers that were meant to showcase the game (listed in terms of quality of videos). All the Youtubers named are veterans (or at least well known) players of Day Z, the current most well known zombie survival game.
The public Alpha is planned for the end of this month and will support all current features available in their pre-alpha builds given to the Youtubers. Alpha will support basic cooperative gameplay, but not server hosted lobbies. PVP lobbies will be available at a later date.
7 Days to Die has already been Greenlit for Steam and the Kickstarter funding period will end soon as well. That I currently know of, the only way to gain alpha or beta access to this game is to donate (the appropriate) amounts on their Kickstarter page.

Glad to see some other people getting their hands on it and hearing about it from different positions.
