Definitely gotta be a Cloud v Sephiroth battle. When it goes well its like a scene out of AC which I think is awesome! I sometimes put Sephiroth against Kuja too just to have both of these main villains against each other for once.

Tidus mainly for the fact that it's his 'story' and I liked his speed and agility in battle. He had useful white magic skills too (cheer, haste etc.) which I used quite a lot especially against some of the harder bosses.

Leviathan in VIII. I love his animation the way he creates a huge rock formation for the water to cascade down and crush the enemies below! :D
Though a close second is Eden. Purely for the fact that he's the most powerful GF and his animation is so long that you can always max out the boost.
