I do a mean omelette. I put a little cheese (American cheese), crumble some bacon in there (make sure its cooked bacon) and POW! a delicous bacon-cheese omelette. And here's a tip. If you want the cheese to be melty and good, use a cheese with milk because a cheese will oil will clump up (ex: chedder) and you'll have a big mess

I got to agree there. American cheese does make the best cheese omelettes. Also, nonstick works the best here as well. In fact, our nonstick frying pan is only used for eggs. Everything else, that gets fried, is either done on a wok or a cast iron pan.
