Actually the Chocobo and Cait Sith are not summons, they are an 'alternative' reel on the DMW and work like Limit Breaks. The summons are on an entirely different reel and you can get those by doing Hojo's missions. Warning though, these missions are pretty hard.
You'll find it impossible to visit all the places you went to in FFVII as there is no 'free roaming'. The whole game plays like a film and you have to go where Shinra send you. You do get to Wutai and Nieblheim and Gongaga (briefly) and missions take you elsewhere, but you can't roam around...
Levelling up hasn't annoyed me in the slightest. I love doing the missions and seemed to level up doing those quite consistantly. The only time it was an issue was fighting Sephiroth...twice....and in fact you don't have to be at a super mega level to finish the game, seriously. Loved the DMW...
