I've recently bred myself a chocobo, and everytime I try to breed it again, it says it's too young. How long does it take to mature a Chocobo, and what must I do?

So, this is my first time playing FFVII, and I missed the Enemy Skill materia. I'm at the Gold Saucer right now. Is this is a game threatening mistake, or can I just go back and get all the enemy skills I missed once I obtain the next possible materia at the City of the Ancients?
