Hard to nail down one - in general I'm a huge fan of slow-cooked meats over all else. A big, bone-in pork shoulder shredded for BBQ sandwiches, Cuban flank braised for hours and served over rice, or dark meat chicken in a good mole.

The 2 I always have trouble with are both optional and in Wutai, which I always did right after Rocket Town: RAPPS and Godo.
If you're not prepared to deal with Wind damage then RAPPS can shred you w/i a few rounds with Aero3.
I didn't read up until recently that you could beat down Godo...
I like the piano version of Tifa's Theme exponentially better than the actual game track.
I also think Farm Boy is criminally underrated.

They're more prominantly known in the US as a 80's hair metal cover band who's been playing the strip since the music was new. There's a ton of stuff on youtube of them with celebrity guests and other prominent musicians.
