I agree with Rydia, FFVI's soundtrack made the game incredibly memorable. From the Into to the mines of Narshe to Atma Weapon to Celes's attempted suicide, the music playing behind the game was one of the best I've ever heard in the series.

The thing with FFV is that its characters aren't the most memorable. You may either like them or not, but it'll come down to you. You may find its character customization aspect engrossing, though, so I would recommend giving it a shot...
Personally, I thought playing through FFVII was a great experience, one that would have most undoubtedly been ruined if I could have simply pressed a "max stat" button to smash through the tough parts. One of the defining things about Final Fantasy games is that sooner or later (for most people)...
It really depends on what you like in a final fantasy game. From what you've said, it seems you like games with good characters and a good intro. I would recommend IV or VI if you want to try an old-school Final Fantasy that has plenty of interesting characters, but if you're looking for...
Try using not commonly used jobs like Bard, Geomancer, or Beastmaster. If you want something random, you should look into the Final Fantasy V Four Job Fiesta. You get four random jobs and you help raise funds for charity.

I'd have to say Bard or Blue Mage.
I like Blue Mages for their appearance (which looks awesome on all characters) and their usefulness. They can be damage dealers (Aeroga), buffers (Mighty Guard), and healers (White Wind).
Bard, on the other hand, I like mostly because I like music....but...
My two heals go to Bartz because no other hero can wear a dancer outfit like him. Not even Yuna.
