I have never played XI or XIV, and have no plans to. I have a strict no MMO policy, and nothing I've heard about those games encourages me to change it. I've also never touched well, any of the spinoff games other than the Compilation of VII stuff. Don't really have any plans to there, either...

VII would be a fine choice, IMO. The gameplay is not that hard, and if he can follow Death Note he can probably follow the plot well enough. If he has any troubles you can offer some helpful hints.

The original English release on the SNES was made a bit easier and has a very iffy translation of which "you spoony bard" was perhaps the best example, which is why I imagine people didn't recommend it.

I've only played the PS1 and DS versions, but even though I haven't played it personally, I think the GBA version is probably your best bet. You get some improvements on the original game (running, improved translation, your choice of dudes at the end, etc.) while retaining the same basic...
If it's a choice between shiny graphics and world-building/exploration, I'd take world-building every time. But... I don't know that it's that simple in reality.

VIII has its flaws, but it's an amazing game in its own right. VII was the game that got me hooked, but if I'd played VIII first I bet it could have done the trick too.
It really (really, really, really, I can't stress this enough) depends on what sort of person your girlfriend is. What kind of things does she like? Why might she like FF? Would she even like FF?
If she's into other nerdy type things: fantasy novels, anime, etc. it might be pretty easy to sell...

Uematsu self plagiarizes a fair amount. I haven't noticed any big similarities in the stuff you mentioned, but it wouldn't surprise me.

I voted X, but I think VI, VII or IX would do as well.
Starting on any of them could set you up for false expectations for the rest of the series, however. They're all so different.
