The only remaster I would recommend over the original is FFXII Zodiac Age, and that's because the license board was way too flawed in the vanilla release.
Maybe they'll do VIII next. They've already ported every other FF from the PS1 era, and did the PS2 era FFs too, so it makes sense for them to do VIII too since that game also has quite a following. At the very least I just hope they get rid of the level scaling.

As others pointed out, VII was ridiculously easy even without grinding or breaking the game. The real easiest one is Mystic Quest though, literally a JRPG designed for babies.

I agree with everyone saying the battle system needs fixing. I tried playing it again and was almost immediately put off by how slooooooooooooooooow it is. Personally I think FF10 did turn-based combat right, they should use that instead of the boring and overused ATB.
I don't really have a favourite since I liked them all except Amarant and Beatrix. I must say Kuja is pretty well written as far as Final Fantasy villains go.
