Healing over war
I have to go for the White Mage, just because they not only heal, but possess the most controversial and one of the most powerful spells in the Final Fantasy games: Holy, which is one of the coolest spells against the undead.
Serious parties
The best party for the NES and Original versions of Final Fantasy is most probably:
Warrior (Fighter)
Monk (Black Belt)
White Mage
Red Mage
If, on the other hand, you're playing the Easy mode or the GBA Final Fantasy, the best party is probably:
Warrior
Monk
White Mage...

While both versions have their strengths and weaknesses, it really depends on what you want of a Final Fantasy version.

Why FF III was not put on PlayStation
The only reason I can think of for not making a FF III version on PlayStation is because there was no WonderSwan version to copy graphics and design from, and so FF III was taken off the pipeline.
