I'm not sure I could choose! 
If we were to assume the games on all consoles were the same, I'd have to choose the Gamecube; it ran smoothly, the loading up screen was fun to watch, the controller was incredible and comfortable to hold, the system felt compact yet sturdy.
However, basing my decision on the games, methinks I'll have to go with the PS1 and PS2. I absolutely adore the Zelda games (particularly WW and The Collector's Edition for the GC), but the PS1/PS2 run a longer list of my absolute favourites: Spyro the Dragon (1 - 3), Final Fantasy (VI to X), Beyond Good and Evil (although this lags less on the Gamecube!), Valkyrie Profile 2...
When FFX HD is released on the PS3, that'll no doubt become my favourite.
I'll be able to play FFs I to X, XIII-2, the PS1 Spyro games, Beyond Good and Evil!! and the PS3 has an interface as good as the Gamecubes; it runs smoothly... etc etc.
