It'd help if you specified which opponent in particular you're referring to. Also, this is in the wrong section.
Thread moved to Help Booth.

It helps to look around the place before posting threads. Plus there's already a handful of threads about Seymour here...
Alas, you need to stock up on Holy Water from Wantz before this fight, as it'll be your only way to cure Zombie. If his Morti-whatever it's called has a turn right after you're Zombified, then that's too bad. Just revive and beef back up. It's a simple enough fight, but remember to Dispel his positive status effects when he casts them.
Alternatively, you could charge up each Aeon's Overdrive before the fight and use them in succession to quickly dispatch this HORRIBLE form of his. Though I find that method to be a little stupid, but it does prepare you for the coming battles.
Casting Hastega will aid your effort greatly. Other such supportive magic isn't really worth casting.
EDIT: And about that specific attack, you can try casting a few Protects in there before he does it. Make sure you have full HP too. If it still kills you, then you suck. Train more.

OK, I got about 50+ holy water in stock. The problem is no one in my party knows how to cast dispel ( Yeah, I've been slacking on Wht Magic.). Just another question would any of the Element gems Rikku's been stealing the whole time come in handy?

Not really worth wasting them in this fight. He's got a decent magic defence (expectedly), so... eh. Not worth using up an overdrive like that on him. But feel free if you think it'll help you.
And you really should work on amounting some White Magic abilities. They're almost vital in a lot of fights.

I actually got really lucky in this fight, but before hand I levelled up a bit so as to have better stats and such. I also made sure that everyone had their Overdrive ready to use at the start, including some of the Aeons. Try and get some good armour to cancel out as many status effects as posible. Iirc, he can cats several on you.
Auron is a god-send for this battle.

He's quite hard if it's your first time fighting it. I managed it on a NSG game.
To reduce the damage done from total annhilation, you can cast shell.
Holy waters heal the zombie status.

Another tactic which I quite like using is to get all of your summons a full overdrive (Yojimbo too if you want a higher chance for Zanmato) and just let your summons fight before you and use only their overdrive. Any other attack and you won't be able to use your overdrive due to Seymour using Banish on your summon. Once all your summons have used their respective overdrives Seymour should be dead and buried. If not then a few hits from your characters should deal with him.
