You've only got one Phoenix Down? O_o You might be in quite a pickle if that is the case.
It might be best to ignore the other buggers and concentrate on the boss. I forget if you've got Quickenings at this point in the game, but if you do, I recommend you try to use them just as she gets to the point to use her special attack. With any luck, she'll die before she even uses it.

Have Fran cast Blizzard and make her the party leader. When she runs out of MP, run around until it builds back up and cast away (again). Also, I believe Burrogh (the blue bangaa at the beginning of the passage) sells Phoenix Downs.

Mimic Queen isn't a challenging boss, but she can hit hard - as you're experiencing. Under-levelled characters will die at the hands of her special attack, so make sure you're comfortably beating the monsters surrounding the boss arena [those toads are good for EXP, and the quantity of Mimics is nice for quick training beforehand].
You really should scour the area for more Phoenix Downs and Potions. Although you won't necessarily need the latter [Cure shall suffice], the usage time might help you in a tight spot. Mimic Queen is a rapid attacker, so make sure you keep your HP high with the relevant Gambits; I'd recommend setting Ally: All/Any > HP <50% > Cure to maintain it, though be sure to assign this to your entire party to save consuming just one person's MP.

For some reason killing the little mimics around her helps. I had a hard time with her as well, but was able to beat her once I killed the little ones. I don't know why, but it just helps.

I'll move this to Help Booth since it seems more fitting there.

If you have trouble with the Mimic Queen, you have failed at this point in the game.
You have to be SEVERELY underleveled. I have yet to beat the game(I have about 8 playthroughs allllll at Giruvegan, and I just cba to go through the entire thing unless I drag my PS2 Upstairs, and look at this map of the crystals I found on google - and I'm sure I'd get through eventually without it, but I want the excalibur to lmao.) And through all of my playthroughs I haven't had even a bit of trouble with her.

Excalibur isn't that far away from where you first teleport into the crystal, the map should be easy enough to memorize. Though I'm not sure if you have to finish the story section of the crystal before you can get it.
Anyways OT. Mimic Queen is just like any other boss, if your gambit set up isn't effective then you're going to have a hard time winning.
So set your gambits to something along the lines of:
Party member 1:
Ally: any: phoenix down
Foe: Party leader's target: Attack
Party member 2:
Ally: any: phoenix down
Ally: HP > 70%: Cure
Foe: Party Leader's target: Attack
Party member 3:
Ally: any: phoenix down
Foe: Party leader's target: Blizzard
Preferably part member 3 should have strong magic power, so Fran.
Hope that helps.

On my first play through, even without the use of Gambits [I didn't understand how to use them properly], Mimic Queen didn't give me a jot of trouble. So, no matter how well you set up your Gambits, it's obviously not much of a factor - you must be ridiculously underlevelled to be experiencing any trouble.
The only thing I can recommend is running around for a good while and levelling up your party.
