Adel is not an undead boss, fool.
I insist that if you made an earlier save, go back and kick the crap out of Bahamut, refine his card for 100 Megalixirs, and go kick Adel's ass. This happened to me as well. So I started over, got really strong and obliderated her. She's a pain and the mosters there only give you one XP, which even more of a pain in the ass. But also, cast Regen on Rinoa while you fight her. Sacrfice all your items for good magicks. Besides the necessities like Elixirs and such. Like refine tents for Curagas and junction them to you health. That should help. 
You people are getting me inspired to finish my FFVIII walkthrough. xD
