The first aeon you should give abilities is Bahamut, The only other would be Anima if you have him. Any others should only get cure and haste spells. Your main Aeon (Bahamut or Anima), should also get stat boosts whenever you have a LOT of sphere's, like 80 or more. Don't blow all your spheres or your characters will suffer.
You will only really need the one Aeon. Then the final one with 3 sisters doesn't need enhanced, it already whoops butt.

I didn't enhanse any of my aeons, I don't really think you need to tbh, it's just a waste of spheres. Well, unless you plan on using them alot I guess..... I only ever use mine as sheilds against scary Dark Aeon attacks

I generally find there's a wealth of useful abilities for Aeons. Teach them all Cheer, Focus, Aim, Reflex, Haste, Protect, Shell, either Curaga or their corresponding -ga spell (Firaga for Ifrit) for healing, Dispel, Regen, Doublecast, Lancet, Osmose, Drain, Flare, and Ultima. Yes thats a lot of abilities, but if you plan to use Aeons in battle against the DAs and Arena Monstes, they need all the help they can get. All of the items to learn those abilities can be acquired easily, either by Steal, Bribe or beating certain monsters.

You should also focus on one aeon at a time, so you can have an aeon that pwns all the time. When you think that aeon is sufficient of your needs you can focus on another.
That's how I did it.

It's up to you really. Having a strong Bahamut makes the game incredibly easy, he does 99,999 with one attack.
So if you are having trouble beating bosses etc, or you want to do lots of damage without getting the celestial weapons then, level up bahamut or anima. Also if you get Valefor's second overdrive then it's worth making him stronger.
On the other hand, you can like bambi, just focus on the characters.
So really it's up to you.

Curative spells and Protect/Shell are all you need on an Aeon, honestly. If the Aeon in question is an elemental, then just give them the relevant strong black magic spell [Shiva - Blizzaga etc] so they can heal themselves with less of a cost.
Aeons are typically very powerful in comparison to regular fiends, and can dish out considerable damage to bosses when need be, and that's without resorting to boosting their stats. With that in mind you don't need to worry about their stats at all, though you might want to consider upping Shiva's HP/DEF if you use her.
Osmose is brilliant with Aeons too, considering how low their MP generally is.
