I simply cannot beat it!
Thats it, I tried 3 times, I don't know what I'm doing or not doing wrong, I did not grind for sphere levels, instead carried on with the story as intended. Maybe thats what I did wrong but that simply should not be, SE balance all bosses in the games I have played so that they are challenging and according to the approximate lvl (or sphere progress) of the party and the progress withing the story line. I have had no trouble with the previous bosses and never had to use Phoenix Down more than 4 times within the fight.
The missiles from Cid's ship hardly damage it at all, and once you get it's health down it automatically casts Haste and automatically flies towards you despite it's turn within the battle, making it impossible to dodge it's Poison Breath attack that does 1K damage and posions my party, all my party members have approx 13-6,00 health (excluding Auron who has approx 2700 health) so Posion Breath is pretty much a "Game Over" attack.
So... I would greatly appreciate any help the vets of this game may give. I am no noob when it comes to FF games, since I completed some of the games.
Also, if you say something like "Uhhh.... should have grinded more, simple" then don't bother because A) Thats not useful tactical info and B) it's too late for that.

As for your closing comment: it's not too late at all. The Guado Guardians in the airship are good to train against, and you can easily rack up the EXP after spending 20-30 minutes among them.
An advisable party member to have would be Rikku for her Use ability; Al Bhed Potions are amazing in this battle... you'll also have lots of them!
Using Pull Back -although seemingly ineffective- can potentially aid you greatly. Whilst the Missile Silos are being unloaded unto Evrae, you should cast as many stat-boosting spells/abilities as you can (Cheer and Focus being the better) in order to reduce the damage dealt by his heavy physical attacks, and the infamous Poison Breath. Casting Haste on Auron whilst up-close (and on Lulu when far away) will help you rack up the damage more quickly and hopefully reduce the amount of times you ultimately have to endure Poison Breath and Swooping Scythe.
Although a resilient boss, he's not wholly difficult to master. I'd advise in future that you spend a tad bit more time training than simply diving head first into the story.

I remember having trouble with him on my first play through. Try to move the ship by talking to Cid with either Tidus or Rikku when you know it's breath is coming, only way to dodge it, so keep an eye on how close Cid's action is.
Apart from that, just keep chipping away at him. If you're unable to dodge it's breath, try and get Yuna to summon just before he does, so the Aeon takes the hit (I think they're immune to the effects aswell) then either let the Aeon fight or tell it to leave, and repeat.
Switching your party in the battle is useful to. When the ship is close to Evrae, have Tidus, Auron and Yuna/Kimarhi fighting, when the ship is far away, switch to Wakka, Lulu, Rikku/Yuna (Wakka for the long range attacks, other two for the use of magic, while the other 3 are strong strikers at close range)
He can be pretty tough, just keep chipping away at him, he'll go down soon enough.

Aeons cannot be used due to Yuna being in Bevelle. Personally, I thought he was a rather weak boss owing to the fact that you had to travel through a vast desert, then through Home - gaining Sphere levels and items at the same time. You gain a plethora of Al Bhed Potions in the desert, and these will heal 1000 HP, whilst curing Poison, Silence and Petrification all the same. This renders his Stone Gaze almost pointless (you'll still lose your buffs when healed) and Poison Breath's damage is the only worriful thing now.
Personally, I feel you've overtrained Auron, at that point, my characters had 1800-2000 HP, (on my non-NSG playthrough) which is average. Don't bother with the airship's missles - just concentrate on buffing your party, then attacking. I assume Tidus has Cheer; this ability is very useful - it increases strength and defense. Use this 5 times with Tidus, and his normal attacks will be halved.
Seymour and Anima were more difficult than this fight.....
