I highly recommend that you make FFIX your next installment. I'm not saying this according to personal bias; I did love the junction system in FFVIII (somewhat), but I think...based on the games that you mentioned, FFVIII will not be a good selection for your tastes.
FFIX has a very rich plot that revolves around war and friendship. The romances that occur in the game do not overwhelm the player, nor do they engulf the majority of the game (as FFVIII does).
The battle system is very simplistic. (Many do complain that this is FFIX's only downfall, however, it's very oldschool in my opinion.
I also recommend that you buy FF Anthology. While I have not played FFV, I think that FFVI is one of the best. It's very back to basics. The game is filled with unique characters, great music, and sooo many special perks.
The only unfortunate surrounding is that I was able to beat the game in around 20-30 hours my first time around. (not very long)

I'd go for Anthology because of FFVI - can't say much for FFV as I've never played it.
I might have suggested Chronicles instead as I loved both FFIV and Chrono Trigger (which, in my opinion, is every bit as good as FFVI), but the loading times caused by the movies are irritating.

Everyone's suggesting Anthology, VI ftw! 
And the load times are just as irritating on IV or VI as on Chrono Trigger But you really need to buy them all Yuna. But get IX first, then Anthology, then Chronicles.

So far,no FF has really dissapointed me.I think every FF deserves a whole playthrough,so I think you should just randomly choose one.Everyone seems to be referring FFVI,though.
From what I've played on the FFIII version of FFVI,I can say that FFVI is really that good as everyone says.It's fun and interesting.

I recommend either FFVIII or FFXII. They are both kick ass games and have good plots and stories. some people will argue that FFXII is utter B*******
But i say it is a great game with good characters, especially Balthier as you say. the only bad thing is that it has hardly any piano music in it *sobs*

I gotta agree with Rhea here and say FFIX will be a great game that you will fall in love with completely! It was the game that I watched the intro to and got hooked on the series instantly.
Many complain that the character images and attitudes are childish, however, they face more challenges/trials/adventures than almost any other cast of characters in an FF game to-date. Enjoy it if you go this route! I highly recommend it.

Well if it was me I'd go for Chronicles since it has my two favorite video games on it. XD. If you want the difficult version of IV then go for that version. Although, IV's story is a bit slow paced compared to today's RPGs. Chrono Trigger is also an awesome game and my favorite video game of all time.
But I would recommend that you get Anthology. It's two FF games in one and VI is a great Final Fantasy game and the story is great even by today's standards.
The only thing I have against the PS version of the earlier FF games are the load times. IV's saving times are very irritating, but if you quick save it's a lot nicer. I remember some of VI's loading times really trying my patience but I go through the menu an lot.
If you like VI then you'll definently love IX which I also recommend.

Lol, I think their all great in their own unique way.
If you’ve finished X and VII already, I would probably suggest a FF title in between the two, those obviously being either VIII or IX. Anyway, both are excellent games in my opinion.
FFVIII has a more futuristic Sci-Fi theme to it as I’m sure you know having already played a little bit of it, but it does have a brilliant story to it and I thought most of the character where great despite their bad raps.
FFIX is a great (underrated) game. If castles and a medieval setting is what you like, I’d probably recommend this one to you out of all the others. I has great heartfelt story to it and if you liked the romance that was in X, I’m sure you’ll like the romance in IX as well.

I'm glad I own both FF Anthology and FF Chronicles since they're so rare. I recommend that you buy Chronicles if you can find it somewhere. It's sad that GameStop doesn't sell the old games anymore. That's what I liked most about them. I don't recommend Anthology because you can find new versions of both of the games on the DS or gameboy. After Chronicles, I would recommend FFXIII or FFIX because they're old PS1 games that will be hard to find in a little while.
-I really only recommend Chronicles because it has Chrono Trigger on it. Playing this on Chronicles will probably be the last chance you get unless Square decides to make a remake of it, which i doubt. You can also try to find the SNES version if you want. I recommend Chrono Trigger so much because it's one of my most favorite games ever.

I'd get XII its more expensive than the others and when you complete it you can trade it in for another one probably for free.
