Actualy I take back what I said about Evrae, Yu Yevon is deffinately the easiest boss in the game, over in 2 turns. Penance is still the hardest boss though with those friggin' arms

hardest whole game: Dark Valefor(i haven't been able to kill him yet)

Hardest bosses have gotta be the Dark Aeons and Penance. I guess they're called superbosses for a reason, eh? Other than them, Seymour was a total pain, especially when you faced him in Bevelle and on Mt. Whatever-it-was (haven't played in ages so I don't remember xD). He had some really powerful attacks, and it got annoying when he constantly cast Break and Zombie 
The easiest was the second battle against Evrae - the underwater one.
One Phoenix Down and it's all over. Simple, no?

Please mention bosses that you have fight first and then you can mention optional bosses since they have been obviously made hard.
Easiest boss (storyline): all of them, none of them killed me, first time i died in the game was inside Sin to Behemothi sr.
Hardest boss (storyline): I could mention Yunalesca.
I never quite understand why they attacked her.

The easiest boss in the game is the first one, once you get rid of the sinscale, it's actually impossible to lose.
The hardest is obviously Penance, wicked high HP, extremely high stats, three body parts and a wicked powerful attack if all three of them survive for long enough.

Ya, I agree with OverFjell on this one. 
Found the first Sin battle absolutely easy, until of course you get the underwater battle. =\
Hardest boss would be Seymour (??? on Mt. Yevon, I forget what he was called there), but I died about 20 times before I managed to beat him, using tons of potions, which I never ever use in any FF until that time.
