I did not read through all 40+ pages of this thread so I do not know if I'm posting something already mentioned.
The good news with the remake, IF and When it happens, is that most of the top guys who worked on it could work on it again. Here's the list off Wikipedia -

Hironobu Sakaguchi - Game Producer, Original Scenario Concept. He won't be back, he's at Mistwalker
Yoshinori Kitase - Game Director, Scenario writer. He's producing FFXIII and is also working on the FFVII Compilation. I see no reason for him not to work on a FFVII remake in a Producer/Director role.
Tetsuya Nomura - Character Designer, original scenario concept. I could see him lend any help if needed, aside from him working on any future KH games.
Kazushige Nojima - Scenario writer, event planner. He has since begin to work as a Freelancer. Square-Enix can hire him for this just like they have done for other games since he left SE in October of 2003: Crisis Core, KHII, FFXIII, Before Crisis, Chain of Memories, and Advent Children.
Yoshitaka Amano - Image Illustrator, title logo designer. If needed he is also went Freelance. He has also worked on FFXII, and the three FFXIII games.
Nobuo Uematsu - composer. I believe he too is also Freelance.
If the remake does happen I think it would be in pretty good hands
