I'm always intrigued by Shiva and Ifrit's designs every time a new game comes out. Seeing as that they're in every single title. (Except XII)
And I love seeing the new summons, like Ark in FFIX and Eden in FFVIII.

Dudes, Bahamut, Madeen, and Ark. Bahamut just cuz I love Dragons (and he actually aint that bad in this one, he does a fair bit of damage), Madeen and Ark because of the sweet animation scenes put into them. Honestly, those Holy and Shadow attacks that they dealt looked SO cool.
I didn't use Eidolons that much at all in FFIX, but I think my main one was Phoenix since it would revive anyone that fell in battle. Wait, was Phoenix even in FFIX? If not, meh, he/she is still my favorite. Bahamut's cool too.
