The reason we want to keep it 3 teams is because a few of the challenges were already made up as if there were 3 teams. I suppose I could re-write it easily enough for two teams, but I really want to avoid doing that. Why? Because I'm lazy. =P Also, if only one or two members drop out, that will leave us with...what, 6 - 7 members per both teams? (Not to mention the possibility of uneven members per team) So far there's only 5 challenges written up. We want to keep it 15 members overall. Do the math. 
Really, it should work out for 3 teams. So far so good. There already has been a few changes made.
It's just a matter of collecting more confirmations and finally starting the game.
